Pale Ale
Our Pale Ale is one of our more popular recipes since
it is tasty and easy to make. It is a golden amber color with
a slight sweetness balanced by a crisp hop bitterness. The
flavor of the finishing hops comes through nicely. Reminiscent
of British pub
beers.
Made from British malt extract, Fuggles or Kent Goldings
hops and dry or liquid ale yeast, and corn sugar for carbonation.

| Badger
Amber Ale
This is our most popular beginner’s
kit and one which home brewers return to often. Our amber
ale is similar to a British bitter, which, in spite of its
name, is not all that bitter in hop taste. It is sweeter and
more amber colored than our Warbler Pale. This is a good beer
to begin with if you are not sure how bitter you like beers.
Made from 6 lb. of our special amber malt extract, Fuggles
and Kent Goldings hops, ale yeast, and corn sugar for priming.

American
Light Ale
This is our lightest beer. It is made with a combination
of barley and rice malt. The rice malt lightens the flavor.
It is also lightly hopped in the American style. We recommend
it for the beginning brewer who wants to stay close to traditional
American style beers.
Made with Malt Syrup, Liberty and Perle hops, and ale yeast.

California
Golden Ale
This Ale is lighter in color
than our Badger Amber but still has the full malt flavor,
though it is less aggressively hopped. It is rich, but less
assertive than the amber ale. A popular beginning beer kit.
Made from all barley malt, Cascade hops, Ale yeast and

Dark Ale
This dark ale is based on the malt profile of the
California Golden Ale and the Badger Amber Ale ingredient
kits. We have made the flavor a little more pronounced with
the addition of dark grains to enhanced the slight roasted
flavor of the malt. It is moderately well hopped. Delicious
and easy to make.
Made with dark malt extract, grains, Brewer’s Gold
and Mt. Hood hops, Ale yeast, and corn sugar (for priming).

Stuff American Pale Ale
This American Pale Ale is in the tradition of the
finest of this style. It is modeled after a famous Pale Ale
brewed in Chico, CA., and is dry hopped with the same floral

Scotch Ale
This is a personal favorite
of some of our staff. Our local Madison brewpubs also have
some fine Scotch Ales on tap. They tend to be malty, with
a sweet finish, high gravity, and easy going down. Made

malt grains, Fuggles hops, liquid beer yeast and corn sugar

Brown Ale
Our brown ale is nearly fool
proof. This beer is good to drink in 3 weeks and will stay
in prime condition for months. It is sweet in character,
low in hop bitterness, and moderate in alcohol content.
It is usually made with soft water, so we include some water
softening salts for the home brewer. Medium brown, malty
and sweet.
Made with a premium Brown
Ale extract, a pound of dark dry malt, specialized adjunct
grains, Fuggles hops, liquid yeast, and corn sugar for priming.

Double Ale
We’ve concocted a good
Belgian-style dark ale. It contains authentic Belgian Candi
sugar, Belgian grains, liquid beer yeast and other goodies.
Expect it to be medium bodied, with a sweet aroma and slightly

Belgian Tripel Ale
If you like the rich, spicy, sweet flavor of Belgian triples
you will like this beer. It delivers the wonderfully complex

Diaz Witbier
Buenos Diaz is a typical Belgian Witbier. It is light
in color and contains the typical spices of Coriander and
Curacao orange peel. We also use the Wyeast liquid Wit yeast
for authenticity and flavor. These beers are light in character,
spicy, with a refreshing dryness in the finish. Made with Wheat malt, barley

Honey Ale
This honey ale is delicious
but simple to brew. It combines a mild hop flavor and maltiness
with the deceptively succulent flavor of fermented honey

Elsie's Cream Stout
You might just want to pull up your milkin' stool as you
sip this sweetened stout. We made it modest of gravity but
yet seriously a stout. It has added lactose to cover the

Gestalt Alt
Our alt is not quite as dark as some of the top
fermented German ales. We made it with some
vienna, crystal and wheat malt grains to give an
uplifting, almost venerable flavor, to the finish.
It is moderately yet satisfyingly hoppy. Good

Moon Porter
Our porter is a dark brown,
medium bodied, slightly sweet brew with medium hop bitterness.
It has only light roast barley flavor and a mild burnt malt
character. Milder than a stout; easy to quaff for an almost
black ale. Made with our special
light malt extract, caramel grains, specialized adjunct
grains, Northern Brewer and Goldings hops, ale yeast, and

Groundskeeper
Willie Scotch Ale
Since we developed "Willie" it has resisted classification as much
as its namesake. It is brash, assertive, and doesn't mind giving a good punch
if messed with. It's got the power of a malt and smoke behind it, but to give

Hammerhead Porter
Our standard porter was so popular and our winter’s
so cold we decided to push the limit and make a ‘big’
porter. Of course we had to have lots of malt, grains, and
hops to bring out our ‘big’ flavor. Expect to
find this porter smooth sailing, until the “hammerhead”
begins pounding the waves. Includes Tettnang and Hallertau

Honey Wheat
The smoothness of honey blended with the citrus flavor of wheat.
Wow! This mild beer is higher in alcohol than you might expect,

Kolsch (Golden Ale)
Kolsch is expected to be brilliantly clear and very pale with
a strong white head that leaves lace on the glass. We use
traditional wheat malt as well as Pale Malt to provide this
light clinging lace and the crisp light flavor. Kolsch beers
combine the flavor of both ales and lagers. Ferment on the
cool side of ale temperatures to provide the crisp lager-style

Wellington Barley Wine
Hold onto your beer mug. This barley wine has over
13 lbs. of fermentables in it. It should be made 4-6 months
before consumed so it has time to blossom into the beer
it should be. It has a sweet finish and lots of body and
head. Consume in rational quantities! We use a Scottish
ale liquid yeast to enhance its flavor profile. Galena and

I.P.A.
Rajah India Pale Ale is a traditional
style IPA with its higher gravity and oak flavors. We are

with K. Golding plugs used as a dry hop, and liquid beer

Stout
Our stout is black as night.
Dry, with high hop bitterness and medium body. It has a good
roasted barley flavor with a touch of malt sweetness. Low
in hop aroma as is typical with stouts. A brew sure to please
Irish stout lovers. Experimenters like to take our basic
Sequoia Stout recipe and add to it to make big or huge stouts.

Steam Beer
Our Stanley Steam Beer is meant to impersonate through malts
and yeast the old original style of beer which was born in

Trappist Ale
This is a high gravity beer suitable for winter
sippin, or taking it easy on the front porch. It has over
9 lbs. of malt extract in it, additional malt grains, and
Trappist ale yeast. It has a moderately sweet finish with

Goldings hops, brown sugar, and liquid beer yeast. O.G.

Wheat
Ahhhh – Wheat beer -
refreshing and spicy. Our wheat beer is designed with over
60% wheat malt for spiciness, soft character, and a mild
flavor. We add just enough hops to give balance to the sweet
maltiness, but not enough to overwhelm. Our special liquid
wheat yeast gives the clove-like flavor associated with
the weizenbiers of Southern Germany. Wheat
beer is usually fermented at ale temperatures and drunk
within 4-6 weeks for the freshest flavor. You may also store
your wheat beer at cool temperatures for a month to develop
