Boiling Pots & Stoves
Choose your pots well. The best pots are made of stainless
steel or enameled steel. Avoid aluminum as it can impart an extremely
unpleasant taste in certain situations. Stainless is your best choice
though it is more expensive than enameled pots. Stainless is virtually
indestructible though one must not let chlorine or iodine Sterilizers
sit too long as they can attack stainless. You use your pot to boil
the malt and hops together for 30-90 minutes during which time reactions
occur which precipitate proteins and incorporate the hop bitterness
into the wort.
Your pot needs to be 1-2 gallons larger than the amount you plan to
boil. This allows for sufficient headroom so the natural boil over
that occurs has room to rise and fall, avoiding the dreaded boil-over
onto your pot, stove, and floor.
