| CORN
SUGAR The basic sugar used in brewing. It is used
for priming and for economizing as a replacement for malt.
A corn derived dextrose, it contributes less of a cidery flavor
than cane sugar. Though often recommended in the recipes on
imported cans of malt extract, we recommend using it only
for priming. To make a lighter beer use rice solids or brewers,
corn syrup instead.

CARBONATION
DROPS These little suckers are made of dextrose
and sucrose. They come in a bag of 60 and will carbonate
5 gallons of beer. Drop one in a bottle of beer and 3
days later you will have carbonation. They taste good
too! $4.75

| LACTOSE
An unfermentable milk-derived sugar used to contribute body
and mouthfeel to beer. Use at rate of 4 oz. in 5 gal. for
body effect and up to 8 oz. to add sweetness to beers. May
be used in Milk Stouts. Adding too much may impart a milk

CANDY SUGAR A very pure, slowly crystallized dextrose/sucrose
mixture used in traditional Belgian beers. It adds its own
special flavor and aroma. 100-750 Lovibond. Available in Light,
