Barrels, Bungs & Treatments
Barrels are excellent containers
to put wine in for aging and for adding dimension and complexity
to wines, especially red. Care must be taken to taste the wine periodically
so as to not pick up too much tannin or over oxidize the wine.
Initially a new barrel should be
filled with water and soaked to ensure it is water tight. Then it
is cleaned and sterilized (with sulfites) before the wine is added.
As in any secondary fermentor, the wine should be filled to the
very top of the barrel, without touching the stopper and airlock.
From this point on it is a good
idea to taste the wine every several weeks to determine when to
remove the wine. A new barrel will need the wine removed more quickly
than a barrel which has already had wine in it. Taste will be the
determining factor in deciding when to take out the wine. Barrels
are not inexpensive, but used wisely, they will last for years and
improve your wine. Ask for our barrel information sheet for more

Barrels are often not available
year round since they are made sporadically by the cooperage throughout
the year. We can take your order anytime, but July through early
September are the best times to order. Notice that the price per
gallon gets considerably less as the barrel size increases.

Treatments
| Description |
| Oak
Chips - Oak chips are a way to put the barrel in
the wine, instead of vice versa. Easy to use: simply place
them in a muslin bag, dip in boiling water, and immerse
in the wine in the secondary. (Glass marbles can hold the
sack immersed.) Stir and taste the wine over time till desired
effect is achieved. Available Toasted or Plain. 16
