Sterilizers
The sterilizers used in winemaking
are usually different from those used in beermaking. Some form of
sulfite is often used in winemaking. It can be placed into the fruit
juice (must) to keep bacterial level low, whereas it would produce
off flavors if used in beer wort. Containers may be sterilized with
sulfite, chlorine, or iodine. If using chlorine or iodine, be sure
all remains are rinsed clean before preparing the wine must.

BISULFITE The basic sterilizer used in winemaking.
May be used to sterilize equipment as well as placed in the
wine. In the wine it: keeps bacteria level low, minimizes
oxidation, helps aid settling. (Note: a small percentage of
asthmatics are allergic to sulfites). |

LYSOZYME A new product recently released! Lysozyme
is a naturally occurring enzyme isolated from egg whites which
can be used in wine to control lactic acid bacteria. It also
has no activity against yeast. It is used in conjunction with
SO2 because it has no anti-oxidative effect. It can, however,
be used to help greatly reduce the amount of SO2 needed to
achieve microbial stability over the life of both red and

Dosage to block the onset of malolactic fermentation at the

Finings
Finings are ingredients used to
clarify wine or beer. Some are added early in the process, others
are added when fermentation is finished and the wine or beer is
not clear enough. Whether to add or not is often a judgment call.
If you don’t mind hazy wine or beer, occasional snide remarks
bother you not, and you like the least invasive approach, do not
add. The cloudiness usually does not affect the flavor, just the
aesthetics. Most fining agents do not affect the flavor either.
Use pectic enzyme initially to avoid cloudiness in fruit wines.
